While waiting for a better solution to this problem, I have implemented the 'hack' set forth by @umbrellax. Here are a few clarifying comments.
Apparently one cannot 'multi-select' categories in a menu item of type Category List. I had no all-inclusive parent category that brought together all other categories into one family, so I created one calling it All Categories.
There is no Batch Process available to assign a parent to numerous categories at once so I selected each subcategory in turn and edited the parent category of each.
I created a new hidden menu item and assigned All Categories to it. While still in the menu item editor, I selected the Page Display tab and entered a unique class to the Page Class field. (That class now appears in the <body> element and elsewhere although it might be concatenated with another class if you don't add a leading space to the field.)
